More bug fixes!

Fixed dodge chance resetting to base value on save/load for all classes, agility level-ups now persist correctly
Fixed Rogue not spawning with any stealth chance, now correctly starts with 20%
Stairs now always render above items and corpses so they can never be hidden
Fixed rare floors generating as a single room, making the exit impossible to find
Unidentified items in the inventory now show a [?] tag so you can see at a glance what still needs identifying
